Kagoshima is renowned for its rich culinary heritage, and our chefs have truly embraced this when it comes to the Passport to Japan specials that we’re presenting this September. From a region that’s famous for its Kurobuta pork to its prized seafood, you’re in for a delicious taste of southern Japan.
First up, Kurobuta pork, known as the “Wagyu of pork,” takes centre stage. Cambridge, Cheltenham, and Solihull are all serving it as a classic Tonkatsu—a crispy, panko-fried pork cutlet that’s rich and tender. Whilst over at Clifton, you’ll find Kagoshima Ramen featuring seared pork belly in a hearty chicken and pork bone broth for a satisfying dish with deep flavours.
For beef lovers, both Cambridge and Battersea are offering Kagoshima’s renowned Kuroushi Wagyu—famous for its creamy marbling. In Cambridge, enjoy this delicacy panko-fried with house-made tonkatsu sauce, while Battersea presents a comforting Wagyu Sukiyaki with mushrooms, tofu, and vegetables in a sweet soy broth.
Kagoshima’s pristine waters yield some of Japan’s finest seafood. Clifton serves a fresh Hamachi Donburi—a rice bowl topped with buttery yellowtail sashimi, spring onion, mooli, ginger, and sesame. Solihull and Battersea highlight Hamachi and Bluefin Tuna on their sushi platters, showcasing the best of Kagoshima’s seafood.
Also from Kagoshima’s waters is Katsuo or skipjack tuna, a prized catch used to create the famous bonito flakes. In Cambridge, savour Katsuo No Tataki—lightly seared skipjack tuna marinated in yuzu soy and served with grated ginger, daikon, and bonito flakes for an umami-packed bite.
Kagoshima is also famous for its sweet potatoes, the key ingredient in Japan’s popular spirit, Shochu. Cheltenham pays homage to this with their Potesara, a Japanese potato salad featuring white, purple, and sweet potatoes, mixed with vegetables, ham, and Japanese mayo. Battersea takes a sweeter approach with their Glazed Satsuma-imo—a luscious dessert of glazed sweet potatoes served with yuzu mango cream.
To finish, Cheltenham offers a refreshing Mikan Ice Cream, made with sweet mandarin oranges from the Satsuma province, topped with a swirl of zesty mandarin sauce.
