We source our A5 Joshu wagyu beef from Gunma prefecture on the island of Honshu.
It’s famed for its rich fat content and beautiful marbling or “shimofuri”, meaning “frosting” or “snowflake”. This gives is its distinctive melt-in-the-mouth texture and luxurious taste.

A bit about our fish…
We only work with fish suppliers who, like us, care about protecting the world’s fish and seafood stocks.
Where possible we source from sustainable small scale fisheries with animal welfare at the heart of their business. Many practice Ikejime, a traditional Japanese method of harvesting fish in a more humane way. Our tuna is pole and line caught and our yellowtail comes from recognised sustainable suppliers in the Indian Ocean.
All our dishes are made to order and will be served to the table straight from the kitchen.
