Sapporo is the festival city, and these are one of Japan’s favourite festival foods! Traditional chicken meatball skewers, glazed in teriyaki sauce and served with pickled ginger, spring onion, egg yok and soy sauce.

A staple dish born from the fishing traditions of Hokkaido. It literally means ‘fresh fish rice bowl’ and essentially represents the catch of the day from the abundant waters that surround this prefecture. We serve our Kaisendon with salmon, tuna, scallops, sea bream, sea urchin, prawns and ikura.

Sapporo Ramen 17

They say, once you’ve tried your first Sapporo-style ramen, you’ll never look at ramen the same way again! We’ll be putting that to the test in Cheltenham, with a rich ramen featuring Sapporo’s signature miso broth. Miso ramen made its debut in 1958 at the Aji no Sanpei restaurant in the city. Developed by owner Morito Ohmiya, the traditional serve used crinkly, medium thick noodles designed to hold their shape well in the broth. Our Sapporo Ramen is presented with braised pork belly and mince, bamboo shoot, spring onion, sweetcorn and tea-stained boiled egg, in a rich miso broth.

Wagyu

We source our A5 Joshu wagyu beef from Gunma prefecture on the island of Honshu.

It’s famed for its rich fat content and beautiful marbling or “shimofuri”, meaning “frosting” or “snowflake”. This gives is its distinctive melt-in-the-mouth texture and luxurious taste.
