This month we’re venturing to Kagoshima, known as the ‘Naples of the East’. Previously named the Satsuma region, and birthplace to the Japanese mandarin of the same name, Kagoshima is also the largest producer of Katsuobushi, or dried bonito flakes, and is famed for its heritage Kurobuta black pork, fresh seafood, and the humble sweet potato… the majority of which goes into distilling the popular Shochu spirit.
