🐟 Bluefin Tuna Chūtoro – The Ultimate Indulgence
We’re proud to introduce sustainable Bluefin Tuna to the KIBOU menu — and not just any cut. We’re showcasing the highly prized Chutoro: a luxurious belly cut known for its melt-in-the-mouth texture and rich, buttery flavour.
You’ll find Chutoro featured throughout the menu:
As sashimi — simple and elegant
In nigiri form — expertly sliced, gently pressed
Tataki-style — lightly seared, bursting with umami

🍱 Bold New Plates to Share – Meet the Tokusen Range
Looking for something to savour with friends? Our new premium Tokusen sharers are made for exactly that.
Each dish is rooted in authentic regional ingredients and designed for indulgent, flavour-packed sharing. A highlight? The Black Pork Katsu — a crisp, juicy Kurobuta pork cutlet hailing from Kagoshima, Japan’s answer to Iberico pork.

Temaki have always been a KIBOU favourite — but this season, we’re raising the stakes.
Inspired by the artistry of kaiseki dining, our Open Temaki bring interactive fun and freshness to your table. Designed for hand-rolling and sharing, these make-your-own sushi cones are as satisfying to assemble as they are to eat.

Scallop Temaki – served with soy, ginger & ikura
Salmon & Avocado
Mixed Vegetables with Tofu (vegan-friendly and full of flavour)
