Bluefin Tuna Carving Ceremony and 8-Course Tasting Menu - Cambridge

Join us on Thursday 10th July at KIBOU Cambridge for a one-night-only culinary showcase  – Bluefin Tuna Ceremony. Held as part of Cambridge Food and Drink Week, this exclusive event combines the artistry of tuna carving with an exquisite 8-course Japanese tasting menu, a first for the city.

In partnership with Kirin Ichiban, the evening will centre around the ceremonial carving of a whole sustainably sourced bluefin tuna, led by KIBOU’s Senior Head Chef, Jay Manglicmot, and his expert sushi team.

A Rare Culinary Performance in Cambridge

Known in Japan as Maguro Kaitai, the tuna carving ceremony is a captivating demonstration of Japanese knife skills and fish butchery. During the event, guests will learn about the anatomy and preparation of the bluefin tuna, one of the most prized ingredients in Japanese cuisine.

Our tuna is sourced from Balfegó, a world-renowned Spanish supplier known for their sustainable, traceable bluefin farming methods. Guests will experience the flavour and texture of cuts like Akami (lean loin), Chu-toro (medium-fatty belly), and O-toro (extra-fatty belly), expertly prepared and served across multiple courses.

A Japanese Tasting Menu to Savour

After the carving, guests will be seated for a premium 8-course tasting menu, designed to highlight the versatility of bluefin tuna through both raw and cooked dishes.

Highlights include:

  • Tuna sashimi trio – Akami, Chu-toro, O-toro

  • Nigiri selection – including truffle-topped O-toro

  • Yuzu miso tuna taco with Exmoor caviar

  • Negitoro maki, tuna tartare, and crispy tonkatsu

  • Hōjicha crème brûlée to finish

Each course will be paired with a matched drinks package, including sake, wines, and a welcome Kirin Ichiban, Japan’s premium lager brewed using a first-press method for a clean, balanced taste.
