What is Mazeudon?
Straight from the buzzing izakayas and noodle bars of Tokyo, Mazeudon (まぜうどん) is inspired by one of Japan’s hottest food trends. The name comes from the Japanese word mazeru – meaning “to mix” – and that’s exactly how you eat it: thick, chewy udon noodles stirred together with a flavour-rich soy-dashi sauce and an array of toppings.
Unlike traditional ramen, which is served in broth, Mazeudon is brothless, making the sauce the star of the show. It’s a must-try for fans of Japanese cuisine looking to explore something a little different, but still rooted in authenticity.
